Sugars and sugar alcohols in chocolate and jam

Ring test P2530-RT is designed for the quantification of added sugars and sugar alcohols in chocolate and jam. Sugar alcohols are widely used in sugar reduced products. Due to coelution of some of the sugar alcohols and the complex matrices this analysis remains challenging.

Chocolate and jam are chosen as matrices. All sugars and sugar alcohols mentioned below are covered in the tests. The sugars and sugar alcohols are either naturally contained or spiked to one or both materials.

The unspiked materials are provided as a blank materials upon request.

The analytical data are assessed with respect to

  • the correct identification of the spiked sugars and sugar alcohols,
  • the comparability (z-score), and
  • the trueness (70 to 120% of the spiked level, as far as applicable).
